The Pasiegos are the mountain cattle people of the Pas, Pisueña and Miera valleys in southern Cantabria, and what sets them apart is a way of living on a slope. They did not gather in villages. A Pasiego family traditionally owned a string of walled meadows at different heights, each with its own stone cabaña, a two-story hut with the animals below and the hay and household above. Through the year the family followed the grass up and down the mountain, moving cows, children, bedding and cooking pots from one cabaña to the next several times a year. This move is called the muda, and it still shapes how the valleys look: steep green hillsides divided by dry stone walls and dotted with small, scattered buildings.
The core of the territory is the three Villas Pasiegas, Vega de Pas, San Pedro del Romeral and San Roque de Riomiera. In the late seventeenth century they won their separation from the jurisdiction of Espinosa de los Monteros in Burgos, and Pasiego settlement still spills over the watershed into northern Burgos. Pasiegos are Catholic and speak Spanish, but the local speech is a variety of Cantabrian that dialectologists prize for its metaphony: the vowel at the end of a word changes the stressed vowel before it, a trait also found in parts of central Asturias.
For centuries their neighbors treated them as outsiders. People who married among themselves and kept to the high pastures had Jewish, Moorish and other foreign origins invented for them. The stereotype of the shrewd Pasiego trader grew out of real commerce. Pasiego women walked long distances with the cuévano, a tall wicker basket worn on the back, carrying butter, cheese, contraband and sometimes a baby. In the nineteenth and early twentieth centuries many went to Madrid as wet nurses for aristocratic and royal households, and their red skirts and coral necklaces became the recognized look of that trade. Herders crossed streams and walls by vaulting on a long wooden pole, the origin of the salto pasiego, which survives as a regional sport.
Dairy still runs through everything. Holstein cows have largely replaced the native Pasiega breed, and many cabañas stand empty or have become rural rentals. Even so, the buttery sobaos and the soft, cheesecake-like quesada made in the valleys sell across Spain under protected Pasiego names, and a shrinking number of families still move with their herds.
